Foie Gras is a very old product: the Egyptians and Greeks produced it, and the Gauls continued the tradition.

There is a fresco dating back to 2500 BC, which depicts the Egyptians force-feeding geese.

The geese force-fed on fresh figs travelled from Gaul to Rome. After several centuries of inexplicable disappearance, it was in XVII that Foie Gras reappeared, due in particular to the Jewish populations, and spread to the south-west of France and Alsace.

The introduction of maize in France and different ways of preparing it slowly gave rise to the dish that we can most often taste today.. .
